We are running a cNFS on GPFS 4.2.3-9 on 7.4 and kernel version 3.10.0-693.21.1.el7.x86_64 and are not having any errors.
So it's probably just GPFS not being ready for 7.5 yet.
GPFS being not supported on 7.5 at this time would be the starting point. I am also under the impression that kernel NFS was not supported either it's Ganesha or nothing.
The interim fix is probably to downgrade to a 7.4 kernel. Certainly in the past that has worked for me.
